Each block is stacked on top of the previous one. Adding another block to the top makes all lower blocks more difficult to remove: there is more "weight" above each block. A transaction in a block 6 blocks deep (6 confirmations) will be very difficult to remove.

and this happened to me some times already,,,

Firstly, we can't talk about it over coffee since Athens is in lockdown. Secondly, if the amount that you are asking is "big" enough questions like the origin of that money may arise. BTC now worth ~€30k... No offence but you are a total stranger and since you want to buy with cash in person and not eg. through an exchange can be risky...
And for sure, I can't imagine someone to sell in person BTC (or any other crypto) without commission.


Ask for a signed (and dated) message to prove ownership.

That's not necessary since they can be sent directly from an exchange. Personally, I would never make any deal in person (if the person is a stranger to me) through my wallet.

I hadn't thought about that, it makes sense not to link your wallet to a cash trade.

Where I live, since 2 months it's no longer allowed to withdraw Bitcoin to any address not owned by you.

I can think of a scenario: someone who wants to sell Bitcoin without having answering questions about it's origin. Kinda the same as the guy who wants to convert his cash into Bitcoin.

In the first scenario, the question still exists even if the seller doesn't "really care". The second scenario/ trade is different because you can convert your cash through your bank account, exchange, PP, even ATM. Ofc these ways need verification and answer regarding the justification of the money. In more simple words: Cash = Trouble lol

Where I live, since 2 months it's no longer allowed to withdraw Bitcoin to any address not owned by you.

It was a pretty sure thing that this will eventually happen (country by country) and now that "golden boyz" and "biggie funds" buy BTC, we will see more measures/ KYC/ strings attached.
Still, there are ways to stay/ move/ buy/ sell etc, under the radar... Wink Cool Tongue

Apply common sense
 about Coffee in my office space not a cafeteria and as you probably know or maybe you don't some companies in Athens can and do conduct business during lockdown so that wouldn't be a problem and if you talking bigger amounts that is the way to do it
meeting and talking face to face  is what i know,  talking about cash transactions not dodgy deals here
anyway...
