Run a full node while also mining?

Assuming I meet the minimum system requirements, any reason why I can't, or shouldn't, run a ethereum full node while also mining ethereum?

You can but you shouldn't. There are a lot of scammers peddling malware as mining software.
Keep your wallet secure by not running any mining software on the same system.

There's no problem, you can run node and mine in the same PC without issues

User above said about malware, and it's right, but you just have to download miner from right sources and there's nothing to worry
If you will use Phoenix Miner for example, just download from the source of this forum, and it's ok

I have a PC mining with my wallet and I mine for years, just be careful as always, to not download or execute any suspicious software on your machine.

if it goes missing you have malware.  if it never goes missing most likely you are good to go.

ie keep about 0.01 eth in it

A canary in the coal mine? Another node wil be needed anyway so I don't really see the point.

How big is an ethereum node these days? From what I understand the full node is somewhere >6 TB while there is a "Quick" node which is only 600GB or somewhere around there. I think the full node is best for the safest network security however most people probably don't have the bandwidth or hard drive space to host it.

So you can certainly do both. Since the GPU pretty much uses no bandwidth, no hard drive space and no CPU usage the node which uses lots of bandwidth, HD usage and CPU won't be affected at all. 

Are you going to mine with pool or solo? Most likely not worth solo mining these days. So if you mine with a pool, you don't need to worry about theft since you won't mine to a hot wallet on your node, you can just mine to an exchange or cold storage wallet.
