When creating an unsigned transaction, clicking "save" gives you a pop up msg saying the it saved in the wallet instead of the choice of where to save it? Is this something new? Where is the file??

Right-click on that saved transaction, select "Pay...", choose the transaction fee and press the "Finalize" button in the bottom-left corner. Then, select "Export -> Export to file" and you will be able to specify the location of the file.

Ah I see. Just to confirm the export file is extensioned .psbt.

Can I just delete the transactions I created while trying to figure it out. Said paid. Watch wallet though and the fees are at %160. Basically more than I'm sending. Is that normal?

Clicking 'save' will only save it in the wallet file itself.
Without doing the steps in the reply above, the transaction wont proceed but the displayed balance will be deducted and the spent coins wont be available until you delete it from the history tab.

The ones in the 'send' tab are just invoices, you can delete them without consequences unless you want to monitor your previous attempts.
If you didn't broadcast a transaction, they weren't actually got paid as the status say, always refer to the 'History' tab.

It's hard to call it "normal" but it happens from time to time when the transaction fees spike (usually when price is very volatile like past 24 hours). You have to either wait for the mempool to clear a bit so that fees come down or set the fee manually to a lower value if you don't mind possibly having to wait a long time for your transaction to be confirmed.
You can see the mempool here https://jochen-hoenicke.de/queue/#0,24h yesterday fees were around 100 while today they are closer to 30 satoshi per byte.

P.S. Keep in mind that the fee you pay depends on the size of your transaction in (virtual) bytes not the amount of bitcoin you are sending.
