It is always difficult to collect money after the competition started. There will be some with bad results who loose interest. In my experience it is better to collect money up front and leave a way for a couple of stragglers to pay on latter day.

I'm fine with whatever platform we'd using but this is starting early and it will be somewhat very strange so I'd prefer using SuperBRU at least this time, I might try out the Uefa site regardless in order to get familiar with it.

I was not aware that matches will be played throughout whole Europe, this will be totally different from usual EURO competitions, and probably have a surprise winner in the end

I will allow one week from now for you to pay so if you might not be able to source the funds right now just PM me about it. You can put your scores in now on superbru and you can be accepted into the pool later and your scores will carry over so just make sure your scores are in.

I don't think you can create leagues there, but it gives you a link to share with your predictions and also an option to share them via an image and hopefully it updates with the points. It only takes only a minute or two or so to sign up and fill out but make sure you do them before the tournament starts as it won't let you change them after.
