I may need to replace the motherboard on one of my six card rigs. What are some of the best choices now for motherboards to be used for mining?

I currently have an Asus prime z270-a.

Check out the same used motherboard. If not, choose from a similar series so as not to buy a new processor.
I would not buy ASUS PRIME Z390-A series, but I always find interesting offers for $ 60-80 on the used components market.
Mobo does not affect the hashrate of your GPUs, so you have a lot of options

Well keep this in mind. There is a chip shortage still going on. And CPUs are affected. So since your old motherboard was LGA 1151 you should find another motherboard and reuse the same CPU. If you buy a newer motherboard AND don't have the CPU you will need to overpay for a CPU pretty much.

Hence why you see that motherboards are in stock while CPUs are sold out. You cant use a motherboard without a CPU hence why you need to becareful which motherboard you buy. Just go on eBay or Craiglist and buy any other motherboard with 6 pcie slots as long as its the same CPU and you should be fine. Any gamer motherboard will even do.

Buy the same used mobo. They are stable enough and rather cheap. If you decide to upgrade your rig - look at 8 GPUs mobo with m.2. 13 GPU or higher have some troubles with configure.

I currently have an Asus prime z270-a.

The specs you got was too expensive as mine right now, an if there's a way for me to give my unused gigabyte motherboard maybe you could utilize it though I'm not that sure if it works in mining. How I wish I could learn to set up mining rigs too, same what the others are being expert of. I had a friend that started to build on his own, and as he told me it went well but don't know how he earn profit from that.

Not 7 video cards but 8, the motherboard is pretty good and the name is colorful c.A68M-BTC , it uses AM2 and AM2+ CPU and I have A10 6700 CPU running in mine, pretty good motherboard IMO also colorful is the only best brand from China that build quality graphic cards
