You find this information everywhere -> if you can not sort out what you need for a small start, then do more research or do other business.

The very first site for beginners
https://mining.help/
Profit
https://whattomine.com/gpus

If you are a beginner, then it is better to ask other miners to build and configure your farm. You yourself will make a lot of mistakes anyway. Buying a ready-made farm will be much more expensive.

there is simply no detailed information anywhere in one place. If only somewhere on the example of one small farm it was told how to build and what to use

I do not know. I want to figure out what will be more profitable. On the one hand, there are ASICs, they are convenient and already configured.
But dear ones. video cards are more variable and cheaper. But there is a lot of trouble with them (((

Let's say I have a room, electricity and racks. Collected several rigs. How do I start them? What software do you need?

once you have your hardware ready, you have to choose a "miner" which is the software that will be used to mine with your cards. there are some choices.
example:
t-rex, tbminer, nbminer, gminer, lolminer, phoenix miner and so on.
you have to choose on what os you will run it. you can use windows or whatever, or you can use os that are specific to mining like the known hive os, simple mining os, and others (run on a linux base)
you have to choose what crypto(s) you want to mine so you have to 'study' them
you have to understand the basics of mining for you to be able to choose how will you overclock and undervolt your gpus.
good luck
