Protecting against bitcoin exchange volatility

Hi,
we are setting a bitcoin based money transfer business and we are exploring solutions to help us protecting our customers against price volatility while we wait for the transaction to settle. Our customers will generally like to convert bitcoin into fiat immediately and we want to secure the exchange rate.

any experience with doing something like this?
