Yes, I agree with you. If a good Grand master plays chess in the casino then that person will only win the game. Another thing is that there will be no control over fate. I personally like chess and I can say am good at it but even if it wasn't possible to cheat in it, it still wouldn't be suitable for gamblers as a single game may last for few hours. So, unless the bet amount is really high no one would be interested in it.
There is also a possibility to cheat in billiard. A smart person can write a script which will analyse the game and tell you at which degree you should hold the stick and how much power you should apply to the strike.

Most of the games you mention are fairly easy to find on internet casinos, so it should not be a problem for you if those are your preferred kind of gambling activities.
On the other hand, we have also discussed in this thread about the possibility of casinos implementing multiplayer board games, while I and other users agree this would be a good idea some others are not so sure on its profitability since the matches could be very long in comparison to a slot spin or poker.
