Let's be honest, there is no way to know if you can trust a sportsbook. As many have mentioned, check reviews, check their history, if they're on bitcointalk check for scam accusations, and make sure if you make an account you are following all the sites guidelines.

Other then that, even if a site has a good rep its still possible they will scam. Just be careful and don't bet a ton until you feel comfortable with the sportsbook.

First of all check, for how many days or years they are up and running.
Check whether they have a legit license or not.
Also check reviews at trustpilot (though this is not 100% reliable).
Moreover if possible check about the site here in the Bitcointalk Gambling forum.
If you don’t find any issue with site or any scam accusations report against the site, then you are good to go with the site.
Some sportsbooks that I personally use and can say legit are stake.com and sportsbet.io .

Criteria used to rate a book.

1. Security - getting paid is by far most important.

2. Working with the forum. This is a player's thread and books are held responsible for their actions. Questions are asked of books concerning number of employees, time in business, experience, poster problems, etc. If a book is going to ignore a player's thread, they will be severely downgraded. Most books are very easy to work with.

The following cannot be quantified as to importance since being highly detrimental in one category may supersede other criteria used.

3. Poster review - poster review is much more important at bitcointalk than other forums, but other forums are also read. A high review from a new book will weigh less than the review of a book that's been in existence 2+ years.

4. Anonymous - one of the reasons that bitcoin books are used is to stay anonymous. There may be times where it is necessary to question players but it should be a minimum.

5. Margins - If players are going to have a chance to beat a book the margins have to be tight enough to give us that chance. If the margins are larger than -110 (1.91) that's a big blow to a book's rating.

6. Payout speed - If the average is longer than one hour, a book will be downgraded. One hour is sufficient due to possible grading errors. A large book is dealing with a significant amount of money along with a huge player base.

7. Markets - The more betting options, the better.

8. Traffic  - time in business along with amount of players that a book has gives us a large sample size.

9. Currencies used - It's easier on the player if we are allowed to deposit and withdraw from alts.

Miscellaneous - Books accepting fiat currencies are omitted from the guide. Other forums are read to make sure the ratings here aren't significantly out of line with the average of other books.

Other then that, even if a site has a good rep its still possible they will scam. Just be careful and don't bet a ton until you feel comfortable with the sportsbook.

Works the same with decentralized exchanges. Leaving or storing a huge amount of crypto on dex for long term is very risky.

In terms of sportsbook, for me as long as it has good reputation and you don't experience any issues using it on your own, then I will continue using it. But once when I encounter issues like customer support not responding on your query or restricting your account without any valid reason then I will stop using it even if your case is just isolated.

The old reputable casinos are pretty close to a safe platform but you never really know until they scam. There are best recommendation so far from the community  which anyone who had tried betting on are not scammed.

Better just try those recommended and not the newer sportsbook.  Scam sites are just there waiting and when the Bitcoin community knows, you'll know you know.

The questions that you asked are all basic questions which can be answered through common sense op. Finding reliable sportsbooks(FIAT or Crypto) is similar to finding anything reliable in this world(Researching in order to choose the best option).

I look for online reviews(real reviews, not the fake ones), good website design, active customer support, big marketing budget(because the sportsbooks, that are spending lots of money on advertising are most likely willing to build a legit business).
Other things that I look for are the deposit and withdrawal payment methods and the gambling license. Just the usual stuff. Why are you even asking this question? You say that you've been using sportsbooks for a while now, didn't you come up with the same says to analyze whether or not a sportsbook platform is legit or not? Where you scammed by any sportsbook platform?

Their history speaks for themselves. Check their main topic in the forum. If you see lots of scam accusations, then it is a warning. Then see the scam accusations sub forum. If there are lots if threads about that casino, see them case by case. You’ll have an idea of what’s going on. If the casino is new, it is a whole different situation. I don’t play on new casinos so I can’t really comment on that.

If I never have problems placing bets and the casino always provides good service to users, I can feel that comfort.
The way casinos provide services to users can be seen in how casinos try to make users feel comfortable playing gambling.
It may take some time to find your favorite online sports book site because it is not easy to find an online sports book site that can provide convenience.

Basic reputation ( I just look stuff up, the internet is wide so I do multiple searches and cross-reference from different sources) then I make my own judgement. Some easy to judge stuff that could improve my judgment would be how the UI looks, the License (not really a necessity but it's better if they have it imo), and basically the time difference between the time I check them out and the time they started their company. If they passed those and I got curious, I'd try them out a few weeks then make my final judgement after that.

The first indication if a sportsbook is legit or not for me is how well the website looks like. If the layout is modern and sophisticated than it's already a good sign, because most of the scam sites tend to be created very fast and won't be up and running for a long time. That's also the second tell, how long has the website and company be around? The older the website the more likely it's legit. The third step for me is to check reviews online. This forum here is a good way to quickly search for the sportsbook. Maybe they don't have their own thread here, but if a user has a negative experience with them he will likely write about it here. If there are red flags in the past, better to avoid them.

I do not really play casino, I prefer sport. In sport, I have special likeness for football which its result can not be manipulated. With the little knowledge I have about casinos, not the virtual ones but the ones that are real in a way you will see the person rendering the service for gamblers to bet, there are live videos that should prove enough that the gambling site is not manipulating anything. Also having the characteristics that can attract customers is also among. A well reputable sites like Stake should be known that they are not manipulating anything at all.

This question is so obvious to answer because even newbies can find out on which of those sportsbook are trusted, but if you legitimately doesn't know about it then first step to do is to visit their ANN thread because from that you can read the legit information and discussions given by their gamblers and people outside on their community. Also you can also research on google if they have running scam accusations because also from there you can find red flags about the sportsbooks you are searching on.

Make sure the site has been up and running for a good amount of time. Its best to go with sites that have been around for at least a couple of years. The longer they have been online the more you know they can be trusted. Next you want to make sure they are licensed or registered in a reputable jurisdiction. Reviews are a good way to make sure the site is legit but not 100% reliable so always make use of sites like this one when checking out new bookmakers!!.
I personally dealt with both sites. The customer service is great and the odds are very good.

Feedback and reviews from this forum are too important and effective when we're checking the legitimacy of an online sportsbook. Most professional gamblers are here and they already know how most gambling platforms work. right community (e.g. here and other known gambling forums) was likely advantageous to ask around. What I do look is if it's really that active, has lot of players, and the odds if it's better than the other trusted one. The red flags are of course those accusations, though it may subjective on whether you'll not research on it or not.

It's not easy to trust a sportsbook if it is a new one but for existing sportsbook is you need to do some research about it's review, issues and if ever there's a accusation against them. If none and many people did like the sportsbook and many have gambled there then you can trust it as they have trusted it. Though there are some cases where a gambling site does seem to be trusted but they did scam their gamblers because they me be going to bankrupt or they just shut down the site like the others. It may also happen that they are trusted at first but scamming their gamblers once they get their trust or through a shady actions.

-Stick with reputable or widely known or does have big community.
-Search for issues and complaints or pending accusations

Trusting is hard specially new ones but its not really bad to test out waters because everything starts on being new
thats why we shouldnt make out conclusion.
