It can twice in a day or in tow days, we come to accumulate small changes and move on and not depend on the system for our survival. There's not doubt that the results we get in gambling is basically  dependent on how lucky a gambler can be but at the same time, there's more to gambling than just being lucky and that's the part of being experienced and strategic a gambler can be.
When two people are gambling, it's is believed that their fate us determined by how lucky they can be but at the same time, it's also worthy to note that the one that's more experienced in gambling and has a better strategic planning stands a better chance of winning than the other person with less experienced and idea on how to gamble. So I think before one starts gambling, it's very good for the person to seek basic gambling strategies.

I guess it depends on what the planning of the gambler is. Can he afford to lose 200$? Are 200$ profit going to satisfy him? Everything has to be planned and calculated before the gambling session starts. So, while he plays, he is just going to follow the script. For some people to double their initial bankroll is an amazing achievement, while for others it's not enough, and it's preferable to leave without any money on their pockets, than with a 200$ profit. And there isn't any problem on that, since it was previously planned by the gambler, without further prejudice for his finances.

This thing happened to me, got lucky my $20 becomes $200 then ended up to $40. I know if I continue to risk it, it's either I go home with double my money or end up with nothing.

This is best for games like dice and other luck base games that give you an early winning to get you huked to the game, sometimes a lot of them have made us the provision to have first numbers of winning and after then get hit for a series of time trying to build a consistent winning,  so in that case when you win to get the hell out and take a long time break.

Even in sport bets also,  there are several times that we have to make the choice when we get lucky to have recorded early wins,  and regardless of what our emotional state or urge to continue is we have to take the bow if not,  we will end up losing more.

It's easy to say but it's hard to do. You won't understand what's the actual feeling in that situation if you are just a casual gambler.

Hard to resist stopping when your bankroll just doubled playing. There's always in our mind pushing us to continue playing since we are lucky that time. Why should we stop in the first place is always dominating our minds. If the gambler was really able to control themselves to stop on that session once their bankroll got double, then good for them.

For me, it's fine not to stop right away after getting a big profit in a session as long as we just have to make sure that later on, we will cash out some of our wins.

Many people think that to be successful in gambling you just need to set a maximum loss limit and that when this limit is reached it is time to stop, when in fact the maximum gambling limit is also very important or even more important than the spending limit.

In any case, I believe that a 100% limit is too little and that it should vary from one player to another.
It is "normal" for a player to be able to double his winnings in a few plays and I don't believe he should stop playing at that moment. However, I think it is quite prudent for him to at least reserve 50% to 80% of the amount won and not bet any more, that way he can still try his luck by winning even more, but if he is unlucky, he will not lose everything he has won.

True, even outside gambling it is always easier said than done. And I see nothing wrong with people continuing to bet even if their capital just got doubled. Responsible gamblers already have fixed budgets and some others have their time limits. It will only become a mistake if the player loses his budget yet decides to continue or his planned time runs out yet stubborn not to follow it and continue.

If I were in the situation, I would also continue playing. Maybe I will risk half of my profit until I feel the need to stop or until my scheduled time runs out.

It makes sense that they would think or assume as you said "why am I working so hard but the returns are so much lower than the gambling winnings", I'm sure this mindset assumption would be in every person who just got a big win. You probably already know what they will do next, chances are they will quit their job and focus only on gambling to win like before. It depends on each person because I only use casinos to have fun with some money. I don't chase wins because it's very difficult for me. If I lose, I will just walk out of the casino and maybe I will return to gambling a few days later.

I didn't think about recovering my losses from the previous day. I even forgot how much money I deposited the previous day. I always make sure to deposit an amount of money that I can afford to gamble with. So far, I am still fine, even though I still often gamble and experience defeat.
