I have tried both. Essentially they both install Bitcoin Core, Electrs, Block Explorer and LND.

For me the main differences (the most important ones) are:

1. StartOS (embassy) includes more tools like Monero node, CLN (and plugins over CLN) etc

2. StartOS runs over TOR easily, while in mynode you need to pay the "premium" package to access the node through TOR, at least  that was the case 1 year ago.

3. StartOS is easier to debug in my opinion. As such, it is better for technically savvy users.

They both work well, but I would go with StartOS if I had to keep only one. At the moment I run my own node from scratch, but if I wanted to use a ready-to-go node implementation I would use StartOS.
