Don't know about Shiftal but I'm seeing more and more people talk about Paxful as not a p2p platform, simply because it's not non-custodial. I've commented on it before and I think while I also recommend Bisq or similar over custodials, I see nothing wrong with people getting on Paxful and the like first to get the hang of how P2P should work.
Today, I do virtually all of my exchanges to fiat P2P -- directly with others, without using any platform. But this habit and network started on Localbitcoins -- the most centralised of them all, if you think about it.
I don't think that made it any less P2P... just "centralised" in various ways.
