Initially I thought I could make this myself but I checked out the recipe in the link below found on google and I don't think I can get some of the ingredients like Nigerian stock or even thyme, and even if I could it sounds complex specially since I only dabbed into cooking and I suck at anything that needs mixing. Cooking rice and stew separately and serving them that way is fine

Thyme gives the jollof a natural flavour and scent. Most times though you can add it directly to the rice most people often add it via the parboiled protein (either fish, beef , turkey , chicken etc...) the more familiar you are with the dish the more get to know a couple of spices. Looking forward to your dish.

It's a very nice idea to host this competition mostly as we have other kinds of competitions ongoing on this forum during this yuletide season as well.
There's been art contest, pizza day contest, pumpkin carving contest and now we have Naija African food contest.
Great initiative indeed and this shows our dedication to the forum and to our country. Naija no dey carry last o! More power to your elbows!

I checked the link and the steps are way too outdated and complicated for a beginner, preparing jollof rice with that method requires a non-stick pot and a foil so the bottom and the top get dried evenly without getting burnt at the bottom. You can use these simple steps.

Well it's always about art for most contests but this time I'm taking it to another level. This year's contest features all varieties of Nigerian dishes especially our most recognised and dreaded

Indeed the second round of the contents is here again as we did last year.  I thought you almost forgot to host it again, I was even thinking about it before I saw this thread and am glad about it . I respect you for the effort you are putting to make the Naigeria local board an active one, especially during festive period like this. We are delighted to participate in the contest  to make it a success. Once again happy Xmas to all Nigerians local board members.

It's simple all you have to do is Prepare any dish for this Christmas and new year celebration and share here. Make sure to give at least 3 photos of the cooking process to verify authenticity. All african and Nigerian dishes are allowed.

I just wish the  foods will be tested by the judges.  How sweet and nice some food may look but may not be tasty as they look or appear and may even be the winner. Or vise versa  hahaha .

Bad for you guys nobody is going to taste the best jollof rice in Africa prepared by the Sherrif! I think efforts, ingredients and table settings are going to be some of the deciding factors - this is only a speculations as OP is yet to explain anything about that.

Hmm... I am salivating already. I will gladly be part of this contest to show you that I am a good local chef of Nigeria delicious jollof rice. This is a good contest and it makes remember back when I was in college, that we do have Home Economics cook praticals. After cooking, the teacher will move round from table to table tasting and giving marks. It's quite unfortunate that some jollof rice will look very yummy but not delicious.

If you ask me, I’ll say cooking isn’t so different from art, come on it’s all about creativity, putting some creative skills to come up with something spontaneous.
Cooking and Art shares a very common thing, which is creativity. The same way that an artist uses a combination of colours, shapes and textures to come up with an adorable masterpiece, that’s exactly how a cook also comes up with a combination of flavours, ingredients, sometimes colours and techniques to come up with an irresistible result and work of art.

Christmas day is usually a very busy day of cooking. It will be easy for someone to claim the food made by their wives, girlfriends, or mothers as theirs. How can we guide against that?

Also, people will focus more on the aesthetics of the food, how the food looks, than the taste, and since there will be no way to taste everyone's meal, winning will be based on aesthetics and presentation.

I just hope it does not end up being a battle of Jollof and Fried rice.

After accessing the link you mentioned, I saw that your previous contest was a art contest. And the contest you are currently organizing is a food preparation contest. Maybe it will be very difficult for me because I am not good at preparing food at all and I am even very worried about whether the food I will serve will be delicious and attractive to everyone.

I think I agree to what the O.P of this thread just suggested above, as it won't be bad if this thread contains both the discussion and submission of the already cooked Nigerian dishes by members of our community, while we creates another thread specifically for the voting proper. As If only O.P had created a spot at the first comment of this thread, that would have been used for the display of individual submissions by members for anybody who visits the first page of this thread.

However, this was actually an excellent initiative you made @ Mia Chloe, and as such, I woundn't mind booking a flight just to come eat fried rice and chicken by anyone who is done cooking, and invites me over..
