I learnt about payment processors when I tried to understand how some countries adopted crypto currency and use it for payments after they concluded their transactions. At least that is the only reason I know why it exist unless I get proven wrong by someone with more information. Perhaps you can explain more for me.

Assuming you want to buy an item from an online shopping site, the site may not accept bitcoin but allows a payment processor that accepts bitcoin on its site. You can pay with bitcoin on the site. The payment processor will accept the coins to complete your order but pay the site in fiat. You can pay the payment processor by sending the coins on a noncustodial wallet or an exchange.

You might want to research first about the most common ways Bitcoin is accepted in the country you're going to. Here in my country, for example, especially in what they consider as the Bitcoin Island, Bitcoin payments are usually accepted via Pouch, Strike, and Coins, not via BTC payment processors and exchanges. Earlier information to the Op, if you find yourself in a place where bitcoin is acceptable for payments, a non custodial wallet platform can always serve you better without the need of migrating to the regions friendly wallets but if you must execute a trading or exchange your bitcoin for the countries traditional currency, then you must use the custodial exchange.
Knowing that exchange restrictions has been a one known exercise, the governments would only give permit able access to some specific exchange, then you will have no choice than getting friendly with their acceptable exchange.

I would advocate crypto debit card like Wirex for on the go payment  at any POS terminal ^{placed at shops, hotels, airports etc.} in any country where Visa card payments are accepted. I use such card for many years ^{with no problems at all} during my business trips to many countries on different continents and suppose it would stand migrant in a good stead.

For a migrant, you have to do your research about their laws, regulations and policies on cryptocurrencies and if you are migrating to a developed country that certainly have stricter policies not only in cryptocurrency, you have to be careful.

They will strictly trace your financial flow and see where you have that money from. When you migrate to a developed country, that is better than your homeland and it's reason you want to migrate there, you want to have better life so don't only want a better life, but at the same time want to cheat their national system and social security system. It's unfair, immoral and you will have troubles legally too.

Which country are you referring to? Are you suggesting that some countries set up their payment gateway for crypto transactions? I never heard about that. As far as I know, most of them regulate how the payment system works, not necessarily operating it on their own. I also think you misunderstood something here since the payment gateway and exchange wallet or self-custodial wallet are different. CMIIW.

It's very hard to understand what you are trying to ask. Bitcoin itself is a payment processor. An exchange wallet is also can be used as a payment processor. So, if you're asking which is better, depends on the wallet specifically. But if it's only about keeping your Bitcoin, use a desktop wallet that gives you your keys and those are not the exchange wallets. And about what's best for migrants, there is actually no restriction what you can use. Use what you are familiar with and the most important part, you should hold your keys.

I don't know which payment processor you mean but don't trust ppl with your bitcoins. You can't trust exchanges because you'll lose the cryptos if they ask for identity docs. I'd say Electrum's safe because only you'll have access to the bitcoin.

You are quite unclear but I believe by Bitcoin processor you mean is sending from your non custodian wallet out or exchange?, though it depends were you have your Bitcoin but if by choosing from the two, for some reasons important I will chose the first one instead of the exchange transaction because you have no idea if the exchange is prohibited from the country, and if it does it could affect you from transferring to another wallet, though I'm not sure how possible or not it will be but I wouldn't like to see how it is, so will just hold onto the Bitcoin payment which could hardly have any restriction.

Your question is little unclear to me but from what I get, you want to choose between a bitcoin non-custodial wallet and an exchange.
So whatever the reason may be, the right choice would always be to use a non-custodial wallet.
Exchanges cannot be trusted as we have seen large exchanges collapse previously.

Exchange wallets are usually never the best recommendations for your storage of coins or crypto assets as they are prone to compromise it's always best to make ue of a non custodial wallet where you get full control over your assets at any time and then if you happen to need to make payment for any services in any place where you find yourself as a migrant, you can always move the needed amount of crypto in your non custodial wallets into an Exchange wallets or a payment processor depending on the platform upon which you want to make payment or the mode required of you and proceed to make your payments,  but it's always best to have your Bitcoin in your non custodial wallet and not in an exchange wallet,  this applies to anywhere you are in the world a you can always make payments from your wallet into the other wallet as the need arises
