Rather than paying a multisig company. Could i just have 3 remotely located keys myself. Eg safe, pc, phone

Yes, that's the recommended way.

When you start trusting a third party to manage your keys then it becomes custodian wallet.

Yes. There is really no point in paying a company to create a multisig for you and in my opinion, these services are on the borderline of ripping people off. If it's a wallet that will be hot/active, learn how to secure multiple devices across different operating systems/architectures and keep the seeds safe and in multiple locations. If it's not going to be active, minus the former and create the keys on a secure and private system (a guide like this might help), and store the keys safely and remotely as you said.

Setting up a personal 3-key multisig wallet is the most preferred because it gives full custody and control of your asset. It is tamper resistance,  resilient and removes third party trust. Unlike paying a third party company which will have control of your asset, providing a shared service with full custody of the private keys.

Sure you can, there is no need to pay any company doe multisig setup, that is created for high profile individuals who want additional protection.
For example multisig setup can be done with combination of several software wallet and hardware wallets.
Jut beware that multisig adds additional complexity and seed words need to be distributed in different locations.
More simple alternative for multisig setup is Slip-39 aka Shamir Secret Sharing.

Some coordinators used coordinate relevant private keys or hardware wallets if you're using any as cosigner might not handle change addresses correctly. That’s why I strongly recommend testing your chosen scheme hope it is 2-of-3 on testnet before doing anything with real funds on main net.

I think I remember when one brand called mixin safe launch an awareness campaign, I really liked the idea although I was still a beginner when I saw this and since then I have always wondered how successful the project went. I think it's something similar to what op is saying though I can't really place or pin point how the set up was run but I think it required more than one user to set it up which was kind of a loop hole for me although it's good for family set up Incase the owner is not sure of himself in terms of coin.
