I think this seems like an invasion of privacy. Casinos shouldn’t be required to tell their players anything about the other players playing. I believe it is rather a way for OP to feel comfortable gambling online, he probably is the kind of gambler who is used to going to brick and mortar casinos and have a crowd around him having fun like he does, so when he moved to online gambling and could not longer interact with anyone and did not see anyone around him he still feel the need to see a "vivid" casino moving in front of him.

OP are you trying to use this to know how legit that, a Casino is or you just wants to know how popular that a Casino is by knowing the statistics of how many numbers of people that gamble on the casino. I don't know what you are looking for exactly, but in stake you can find number of players are online/playing under each game and it's mostly higher for dice and other popular games but the numbers are decent for most of the games.

The problem is that this proposed method of displaying the number of active users can be misleading, as it doesn't tell us whether the casino is legitimate or not. I'm sure many websites use fake numbers, taking advantage of your bias, which I assume many people share. It's like when you post a status on WhatsApp with read receipts turned off, and you don't know that 1000 people viewed it. That's right, and they know if they grant your request, it will no longer be for fun and people won't be entertained by it, because gambling is a guessing work and if one did not guess, the casino's owners can not make their profit from their business which is gambling.

Exactly. They can give you counters on site and stats and even chats, but how will you know these aren't fake?
How will you know you're not chatting with AI? How will you know the counter is not set to do 10x. It's going to be semi real with live changing stats but they will just set it to do 10x, using a simple script, so that you will see that if you and your friends log out the counter will drop, just to make you feel like it's real.

What is your reason for knowing about crowd gaming? Do you think it will affect your win rate? If so, I think you are wrong. Personally, I think the win rate in some games is random for each user, and I believe that is part of the RNG system. Even if you play sports betting, I don't think your winnings will be affected by the number of users betting on a match. So, I think you are a unique gambler, which means you have a different mindset than others. Besides that, I think the casino also wants to maintain the privacy of each user, so they try to hide it. You will never know the gamblers who play in the casino. You only see in the chat rooms and by the list on the casino showing the gamblers ID. You don't have to bother with the gamblers and focus on your games.

If you really want to know who they are, you can visit physical casino so you will see how many gamblers on that place so you can talk to them or sharing about gambling.
