Well, if you're planning to use USDT or some other crypto, sure, there are plenty of non KYC options out there. For fiat, probably going to be a bit harder.

Unstoppable wallet have recently added few DEXes/nonKYC exchanges to support both Monero and ZCash. You may want to check it out.

You can also use Cake wallet for it but I will prefer the Unstoppable wallet because the wallet developers said the exchanges have no KYC requirement, but it will require KYC, you will see it and avoid it.

I can easily do that on MEXC but some regions are not allowed to make use of MEXC without KYC.

It is quite an irony, that some of these new exchanges that claim to be the future of finance, are the ones who easily freeze any accounts they deem fit and do what they want, whenever they want to because they are in charge obviously.
Well, I did some digging and found that you would have to get a self custody wallet first, if you don't have Zashi or YWallet, you should download them because they are the privacy tools you would need.
Next, you should get a bridge asset like Litecoin or Sol through a local P2p or an ATM machine, you then swap for ZEC.
You should use either THORSwap or SimpleSwap to exchange the asset you bought into ZEC and into the Zashi or YWallet you downloaded earlier on.

If you're insisting to buy it through p2p exchange, you must pass through the Kyc. Though there're exchanges that requires minimum Kycs and there're are also some that're full Kyc.
If you've fear of using the exchange to buy the coin due to the previous experience you had with mexc, that doesn't mean there're no other reputable exchange with Kyc required to buy bitcoin. But if you insist to buy in no Kyc required, then you can consider negotiating to buy from a party offline maybe via recommendations. Don't forget to consider reputation.
Else you can still buy in the Cex and transfer the funds to tour self custodial wallet.

StealthEX has very poor ratings on kycnot.me. I would not even suggest it to OP to be on the safe side. I think I have also seen a case or two where they froze user funds and demanded KYC verification.

Why Zcash but not Monero?
Zcash was only cooked and hyped recent months while Monero is a best privacy coin for years. You can consider Monero and Zcash like Bitcoin and altcoins, and in long term Monero will continue as a best privacy coin. Zcash time and hype will disappear soon, then it will be time for Monero show in the future.
 
You can try buying Monero with some exchanges listed on Kycnot.me website. I am not too optimistic with Zcash in long term.
