This one costed me way more than expected. $5,76 in exchange+network fees where the LTC transaction costed less than $0,01 and the USDT tranfer to my wallet costed $0,35 ... so why this huge gap?

edit: I think this has something to do with price swings. So it says "processing fees", but the gap is pretty much due to the volatility, where my trade "settled" at one price but it got swapped at bit lower rate.

It was a situation like that, which I have also witnessed.
This aspect of market volatility may be valid, but even so, I find it a bit out of context, looking at other pairs that are also volatile.
