Wallet that offers privacy, even when using a third party node?

It's worth noting that some of these wallets coordinate with Block Chain Analysis and will flag some of your UTXOs as have having evil origins, hence blocking them from utilizing the coinjoin feature.  If that's not a concern, then they can be helpful in maintaining privacy.

I would add one thing. Even though many people say that it's better to use Tor alone, I would say that the fact government can see you use a Tor is a red flag and it's better to use VPN and Tor together, but you have to be very careful in this case because you should know what you are doing. You have to be very careful which VPN you choose.

Aside from VPN, consider using Tor bridge. It's designed to avoid censorship by making the Tor traffic look like regular internet traffic.

To my mind, it's still better to use VPN despite the fact that it adds a party to trust. When you connect to a VPN, your ISP sees you are connected to a commercial VPN server but they don't see that you are connected to an unusual IP address (they'll see it with Tor Bridges AFAIK). Also, when you use a VPN, your traffic blends in with millions of other users, which makes it harder to isolate you statistically.

As a user who cares about my privacy, I've always run the Bitcoin Core Full node (unpruned).

I configured an electrum server + private block explorer, but this is a lot of work, besides requiring a lot of effort and knowledge, and with new updates, it get misconfigured something and it stops working completely.

I decided to just use Bitcoin Core as my main wallet, I redownloaded the blockchain in less than 2 days 2x this year. Bitcoin Core is very easy to use, I am sure that my transactions are transmitted from my own node, without any third-party server keeping logs of my addresses (not everyone does this).

It's easier this way, painless and you don't have any doubts

I already tried setting up Umbrel on my older laptop, but the BIOS didn't detect the .ISO. It would be really interesting to have a personal server up and running, it has some really cool Apps like NextCloud, but unfortunately it didn't work out.

Well, that's a fair point, ISP wouldn't flag every unusual IP as a Tor Bridge and ISP has to be actively using an updated blocklist or doing DIP to fingerprint Tor traffic patterns but I would say that the level of threat also depends on the country. ISP is not a problem, ISP doesn't care much but maybe the government? An advanced country with a small population, especially these times when AI is advancing, might waste their resources to strictly monitor people. Maybe I'm exaggerating, I don't know.

Most wallet's I found always fetch all the UTXO's from all the XPUB's every time you open the wallet.

This has the issue that the backend node can see that all these UTXO's belong to the same person. It also doesn't help much if you use Tor/VPN because is still the same IP for the entire request.

Is there a wallet software that has an option to only fetch the UTXO's of XPUB's/Account's manually by clicking on them? And also avoids other identifiers like identifying API Key's ?

To avoid sacrificing your privacy you might want to consider using Bitcoin-Safe wallet, which is capable of fetching UTXOs of interest by connecting to third-party node that supports CBF. In this case it receives from the node the compact summary of block data (called  Compact Block Filter) first, which wallet processes locally without  node ever learning what addresses you're looking for.
