Maybe specific pairs are the ones affected?
I don't think so. I've used MoBit about 8 times, and the order got stuck twice. Once, I contacted the support team via PM and received a response within 48 hours. The other time, I just waited and the problem was resolved.

I think it's either a problem with the node detection/Sync for deposits, or it's related to liquidity or a bug.

If everyone had similar cases, the ratio would be 1:4 or slightly less.

I've used several services, but MoBit.Exchange is the only one that consistently receives this many stuck orders. The problem started the first day I used the platform in April and continues to this day,  I hope this issue can be resolved so that these orders decrease.
I carried out a swap of BTC for ETH earlier on, and the order went through. Initially, the confirmations did not instantly reflect on the deposit status page like the other services I used before, but when they did, the swap was processed, and my Ether arrived promptly. Maybe specific pairs are the ones affected?
In my case, when exchanging BTC for other coins, the transaction confirmation didn't appear immediately, but after about 1-2 minutes. However, this was definitely before the first transaction confirmation in the Bitcoin blockchain.
If you choose the right commission for Bitcoin, the exchange is fairly fast; the longest part is waiting for the Bitcoin transaction.

If I am not wrong then not a single instant, or no KYC exchange, has this feature where users can request to delete their data after making a deal. I might be wrong, so if you have any exchange in mind that can actually do this then please mention. But so far I don't think there is any.
I think hosemary mentioned the exchange B1exch that allow manual deleting of data before 15 days. Most exchanges keep the data for some days so users and the exchange may not face any issues. I think it makes no sense to delete such data because if they've set a system where the data gets deleted automatically after 15 days then it's better to let that automatic system work on itself instead of deleting the data before that. One should also keep in mind that B1exch's manual deletion of data is permanent and not reversible according to their FAQs.

There are exchanges that have the option of requesting the deletion of data after the order has been executed. And mostly, it is desirable that they be deleted as soon as possible.
Later, we are surprised when a service is seized, and it is announced that several terabytes of data were also found.
If someone wants this kind of data to be stored for a long time, then do not choose a no-kyc service or a service that is in some way privacy.

A few days ago I tested an exchange and after an hour the information about my order was not available.

b1eXch has that feature.
In b1eXch, the exchange data is automatically deleted after 15 days, and users are allowed to delete the data earlier if they want to.

You are right, I just read the whole thing, their terms, and their FAQs. You are right, the data is not reversible but that's not a flaw, but a feature. It is subjective to everyone, also we can verify the deal with PGP, nothing to worry about. Even here you can verify it after 15 days, if anything happens based on Mobit's terms.
