Considering this and the market cap of USDT, the tether official wallet is still unable to gain hype and is a big failure. As far as I know, it could have been a much better option if they had only launched a wallet that supports tether only and not other crypto like BTC, etc.
I don't think that's the reason. Investors are lazy and don't like to download hundreds of wallets. For them, one wallet that supports hundreds of cryptocurrencies is better than 10 secure wallets, and these are the majority who might download Tether.wallet.

Who said anything about downloading hundreds of wallets?

Most people have two or three.

They would hate having to write down a stack of seed phrases that would end up being as tall as a paperweight.

How do you even store all that?

I don't agree with this. Sensible people will store bitcoin in a bitcoin-only wallet and not in a wallet that supports multiple cryptos. Besides security reaosn, another reason is that most people have bitcoin as a major cryptocurrency and they shouldn't be invested much in altcoins ( remember sensible people  Wink ).

Now, after Bitcoin, I guess the next major crypto that people have is stablecoins. ( Even holding stablecoins is better than holding any garbage altcoins). I think if there was a tether-only wallet by Tether, it would have been more appreciated, downloaded, and used.

Well, you cannot say that tether isn't popular here, in fact, the stablecoins have their important roles in cryptocurrencies and 90% of the traders are done in stablecoin pairs and not in bitcoin pairs (as it used to be in the early days). Considering this and the market cap of USDT, the tether official wallet is still unable to gain hype and is a big failure. This is not true as that does not make logical sense. There is no data that would indicate that a wallet would have more popularity if you excluded Bitcoin from it.

The problem is the wallet does not support a ton of coins.

Why have a wallet that does 4 to 7 coins when there are wallets that do 100 plus coins.
But that support does not come for free, so there is also a reason for this. If we speak about tokens and a single standard then this is not true, so if you are supporting BTC and ETH and 5 tokens on ETH you may as well support all tokens on ETH. But when it comes to different coins and different infrastructure, adding each new coin increases the complexity of the wallet and with that the surface for attack also expands. Accepting a new coin is not simply deriving a wallet and checking its balance through a node or explorer, you must implement the way it creates transactions and different other things to make it fully compatible. The wallets with most supported coins are probably the highest risk wallets irrespective of the platform that they are on, so there is always a trade off.

Also tether can be frozen in any wallet so if you use tether a lot this wallet does not protect from freezing your coins and does not allow 100 or so other coins thus not much To work with.
That is very true, some are just making conspiracy speculation here but Tether does not gain anything in ability to freezing tokens with this wallet. They can freeze your Tether on any address on any chain at any time with basically zero cost, they don't need to even give you an explanation for it. Now that I think about shitcoins and tokens and this freezing, I believe the majority of most used tokens on shitcoins have this ability enabled.

It seems that Tether intentionally wants to use its choice of supported assets to show that their tokens stand on equal footing with Bitcoin. They deliberately excluded support even for those tokens used to pay for gas in the networks supported by the wallet. The message here is: "Only Bitcoin and Tether tokens deserve to be represented in our wallet." In other words, it is meant to look like a wallet for elite cryptocurrency assets.
But what if they did that? There is nothing wrong with that and they are free to send this message or design a wallet this way, it is completely their choice to do so.

You are making the false assumption that these people are writing down their seed phrases, many don't.. they are simply stored on the same computer as a note or in some other basic text format. We've seen too many cases of seed words compromise through a mistaken screenshot or video leak in the shitcoin world.

Sure, but I am not saying that everything Tether does is necessarily wrong. Some users may be perfectly fine with this approach.

The problem was already explained above: there are potential users who are unhappy with the very limited number of supported assets. They are not willing to switch from the wallets they already use, which support a wide range of cryptocurrencies, to a wallet that can only really be used for Tether tokens and Bitcoin.

You are right about that but as I wrote about this already, it is a balance that they have to make. Some users prefer having many assets and this comes with more risks, others like more wallets that have a single asset. It all comes with tradeoffs, a wallet with multiple assets could be used as a single wallet if it supports everything that one needs but that convenience comes at cost of security and privacy. Having more wallets is less convenient in using it, having to make backups and stuff like that but if used correctly this comes with security and privacy benefits.

I like to have options, that is why I liked when I saw that for example Trezor has a firmware option that is Bitcoin only. Mobile applications are not likely to have this kind of modular implementation where users could switch, at best they come only with some UI switches that removes some aspects but it comes with a lot of bloat of all sorts and more recently they introduced swap features, news, points and all sorts of useless things in these multi asset wallets. While this wallet is new and has reasons to be criticized at this time, the situation is not much better with other multi asset wallets it is just that other things are wrong with them.
