I am more happier on the wider margin compared to win "by a hair". Personally I am the other way around, if my bet won on the last minute I always say to myself that "I wouldn't dare do that again" since it's a risky bet but if I won on a wider margin, I am contended to it and would be happy about it since I mostly bet on games with odds more than 1.40x so if that bet won on a wide margin then it should be enough for me and won't think that "If I bet more riskier then I could win more", that's the thing that would make you lose in sports betting.

So it feels ordinary if you have your bet winning easily at the early stage and some persons may feel ungrateful and regretful that they would have increased their bet risk. Yes u are right i also noticed this that gamblers often enjoy dramatic wins more than comfortable wins even though comfortable wins are usually healthier and more profitable in the long run . The reason is simple dopamine rush. Let me explain human emotions are driven more by relief and surprises than by logic . If i explain the first scenario that u shared in the post the brain goes from i am going to lose to i won  within minutes. That emotional swing makes a stronger dopamine rush. While in the second scenario  where the bet becomes almost certain from the start in the match there is less tension and less surprises. I like winning by a higher margin for a secure way for my bets to profit. But there's this joy that it could bring whenever I win by a hair. 0.5 to be precise.

As much as I hate losing by 1 point, I also love it when I just won by one point. It gets the blood pumping whenever you are watching the game live, and that one point that will make you win seems like a buzzer-beater for you, although it is just the point that will cover the spread.

If I’m watching live then yes is my answer since it’s exhilarating to win with a very close margin especially if the win is coming from behind when you assume already that bet was already lose.

However, I rarely do overthink on the outcome of the match when my bet was won while I didn’t watch the game live. I just consider it as is based on the result then move on.

I have always dreamt about such thing happening to me especially when I was losing a lot of money and the balance to be near zero soon. Why would you choose the option that is physiologically worse for you? Why do you want to induce stress and anxiety to yourself? Nothing is more fun when you have already given up but the game later played. The excitement is something else especially when your stake was huge. I remember a game I played in the past  I bet GG & over 2.5. in the first half, the away team managed to net two goals so I only needed just one goal from the home team to cash out. The phycological reaction of the placing of the bet is very important because that is where you lucky will display and the amount you bet and win.
