We are going to roll the dice 50 times to make a 12-word seed phrases. As in 50 dice rolls need to be made, not literally every dice has to be rolled 50 times.
Make sure you are using casino dice or some other balanced type of dice to eliminate bias.
1. Power on the SeedSignerPlug the Seedsigner with a micro-USB cable to a power source somewhere, turn it on, and make sure there are no cameras or any recording things pointing at the device.
2. Access the dice rolls menuFrom the main menu, go to Seeds -> Create a seed -> new seed (the one with a dice icon)

You are going to choose between 12 words and 24 words. 12 words requires 50 rolls as I explained, and 24 rolls needs 99 rolls.

Also accept the warning displayed that the seed must stay secret.
3. Roll and enter entropyRoll the dice and enter each number on the device using the joystick/buttons. Just roll it one at a time, don't re-arrange the dice rolls into some silly order. The screen will show the progress (e.g. "Dice roll 23/50" for "Enter the 23rd dice roll")

When it is done, the Seedsigner will generate a list of words like this:
4. Write the seed phraseYou use the sharpie to write it on a paper, or use metal backup plates so that you don't have to deal with torn paper later.
DON'T USE THIS SEED - IT'S FOR EXAMPLE PURPOSES ONLYAfter you generate it, you can use the Seedsigner to export an xpub or zpub via QR for a watch only wallet on some other software. xpub is for legacy addresses (starting with "1") and zpub is for native segwit addresses (starting with "bc1q").
