Sorry our Wordpress guy couldn't reproduce the content-type bug in test installation of Wordpress. It could be a conflict with another plugin you're using, maybe try disabling all other plugins leaving only wordpress seo.

For the utf-8 bug just add to your .htaccess file: php_value default_charset "UTF-8"
