Each block is stacked on top of the previous one. Adding another block to the top makes all lower blocks more difficult to remove: there is more "weight" above each block. A transaction in a block 6 blocks deep (6 confirmations) will be very difficult to remove.

Will it be profitable to accept as payment only Bitcoins for grocery store? I think it's not such a good idea.

Grocery stores and supermarkets are definitely the way forward. Last month, we had a supermarket chain in France acccepting Bitcoin. This month we are having a grocery store in the NZL doing so. Good going, I'd say.  Grin
