I've done some googling and read some charts, saw the currently Darkcoin has the easiest difficulty. Also read that X11 is good for mining with a CPU. Is it worth attempting to mine DRK with an average Core i7 Desktop CPU?

No, you should mine CPU only coins. This way you are only competing with other CPU miners..
