Lets a get a comprehensive list of all scrypt mining pools that you can manually change the mining difficulty for your miners.
Post them up in this thread and I will update the OP.
If you're a pool owner please post up as well.

I think both multipool.us and ipominer.com have manual settings for difficulty.

also unless coinking changed, last time I mined it was only starting difficulty you could set but they use Vardiff so what you set isn't what it stays at just where it starts.
