Buy pork neck (or lamb shank), marinate it for 2-3 Hours in cold place with chopped golden onion, dill and parsley (some white vine too), with NO SALT.
Salt You need add on, when You cooking meat on fire.
When you eat it, use some tsatsiki sauce or white yogurt whit garlic, parsley, black pepper, salt and olive oil. Mixed.
