Hello,

Why does Norton Internet Security show the Bitcoin Core "uninstall.exe" as being a Trojan.ADH?

Norton detects: Trojan.ADH

In the uninstall.exe - it is a LOW result but not sure why it would detect this?

The safest way to do it is to download the source and compile it yourself.
Be very careful where you download your compiled versions.
