George, If I was to vac seal a tray and freeze it, would it be edible after I thawed it out? how long does it last in the fridge if i vac seal it?

Since it has a low moisture content, it freezes very well. I would say it even gets more tender and delicious after it's been frozen. It's very edible. If you vac seal it, it would probably last 5 years in the freezer. In the fridge and vac sealed, probably something like two months before I would start to suspect that it's going bad.

Though I don't know how it's gonna last that long in your household. I once ate a whole pan by myself in about a week. It's addicting.

Yummy chocolate baklava!

Still trying to figure out whether I love the cookies or not. A little dry with something just a little bit off with the taste but I cannot put my tongue on it. But they do seem to grow on you. Might be the low carb/gluten free thing. Perhaps I want some chocolate on them. A big fan of the coconut flour.

Overall, definitely high quality products and worth a try.

The cookies do have erythritol in them, and that has a "cooling" taste to it. There isn't a lot, but it does add to the cookie. I think they taste best frozen. Give that a try. Smiley

Oh and the dough is basically low carb marzipan. Seriously. A friend & I used it to make little characters on a low carb cake and it worked well! Very tasty, too. I should sell that. Tongue

Huh, I saw one at our state auction a few months ago, but it didn't look particularly sanitary. Whack it up with a heavy cleaver, and you should be able to chop lots of slices in an hour.

That would get tiring after a while. I guess I was spoiled by growing up with restaurant equipment (my dad owned a diner). I have a Moffat convection oven in the home right now and I could bake 8 dozen cookies in under 15 minutes with it.

But yes, I've seen equipment go at restaurant auctions. Maybe I'll eventually find a decent one at a fair price.

If you've been waiting to try the almond cookies, I'd order some now because the latest batch turned out absolutely amazing. They're almost perfectly like the texture of a real buttery, chewy (but crispy on the outside at the same time) cookie.

Thanks for the compliment! I really appreciate that. Yeah, I'm very happy with the recipe I use for the cookies. I spent a lot of time experimenting with the recipe until it was just right. A lot of my friends & family who don't eat low carb really enjoy them! I recommend eating them straight from the freezer. Or crumble some up in a bowl with heavy cream. Smiley
