So I read that a university is using the Blockchain to verify certificates. If this data verification becomes more common, will it mean that BTC will always stay relevant? Even if it is superseded by another coin?

Relevant is a relative term. If one university is using it to verify the authenticity of documents, but Bitcoin is no longer in use and has been superseded by another cryptocurrency, is it still "relevant"?

To a small group of people, yes, it may still be useful, but for the majority of people, probably not.
