Bitcoin mining is now a specialized and very risky industry, just like gold mining. Amateur miners are unlikely to make much money, and may even lose money. Bitcoin is much more than just mining, though!

I just thought of this, and wanted to know how pool owners would solve this. What if the pool doesn't stake in a timely fashion? For example, if we have pool 3 not stake until day 40 or something, do you just keep staking until it finally mints or is there a cutoff date?

Timely fashion would be anywhere from 8.8 Days to 30 days for optimum block size, as mentioned withing wiki http://hyperstake.wikia.com/wiki/HyperStake
I have not had a block that went over 16 days.  However, to answer your question. No, there is no cutcoff date, it would stake until it mints.

Yup. However, maybe its something the pool can also guarantee as an incentive. A 1000HYP (max. stake) payout, if the pool takes longer than 30 days.  I'll update OP later to include this as well under "Benefit to participant:". Thank you for bringing up this concern, bellow is what presstab had to say on IRC in regards to optimum block size taking longer than 30 days to stake.

For future reference, next time send the coins from a single address. You had HYP in your main address and your change address, you selected both then sent it to me. Thats why on my end I saw two address, so I pick either one. Which is fine because both address are still yours.
