I assume that you are wanting people who have bitcoin to tip their barber in order to get the barber interested in bitcoin.
I am not sure this would work because the barber would have no way to give you a BTC address if they do not already have a wallet setup. You would probably say that you could give them a paper wallet, however they would potentially show the private key in a paper wallet to someone that should not be trusted and end up with the bitcoin gone. This would not only mean they would probably not want to use bitcoin again for a while, but also that they would be out a tip that you intended for them to get
I've just asked people to download a wallet and then transfer the bitcoin on the spot. Barbershops work particularly well because there is usually a lot of conversation happening between the barber and his/her client. You have time to really explain Bitcoin while they're cutting your hair, and by the time your haircut is done they've downloaded a wallet and are ready to receive a payment.
Even better, they may end up talking about it to their clients instead of the football game.
