You still need to trust the third party escrow service if you are using multisig; the escrow could simply collude with your counterparty to have a TX sent to them (or the escrow could just be an alt of the person you are trading with).

Also I am confused by the title; what is the point of the question "How do you refund your BitCoin/LiteCoin?" (the "c" in coin should also not be canalized in either bitcoin nor litecoin)
