I just purchased some bitcoin and sent it to the address on the Bitcoin wallet app. While waiting for the transaction the app updated and now has a different address. Is my coin lost forever or is the wallet info stored on the phone somewhere?

It is a common myth that Bitcoin is ruled by a majority of miners. This is not true. Bitcoin miners "vote" on the ordering of transactions, but that's all they do. They can't vote to change the network rules.

If you don't have tip on the button "clear data" (setting > applications > bitcoin wallet) ... the bitcoin adress is always in the wallet.
It's the "HD wallet feature".

the receive adress change every when you receive 1 transaction.
original (so, all created adress) are in the HD wallet.

do the backup, dude ...

Which app are you using? May be you can find out who the developer is on this forum and ask him directly.
