I'm new at this, so this might be an easy fix.

Whenever I try to mine I get the following error:

Listener for "Standard": 19/05/2011 02:09:34, Bitcoin is downloading blocks...

Is there something I'm doing wrong?  What other info should I provide?

Are you solo mining or in a pool?
Sounds like your solo mining against a bitcoin client that's still syncing up the block chain.
If you're targeting a pool, which?
What settings are setup in the GUI of Guiminer ?

behaigo, you need to wait some minutes-hours.

That's normal while starting with Bitcoin.
