I have been looking at USB Random Number Generators.  If I install one on a Unbuntu system, then I assume the kernel and then Bitcoin Core will use this as its entropy?

bitcoin uses openssl's RAND_bytes to generate its keys. According to https://www.openssl.org/support/faq.html, it does use /dev/random to obtain entropy.

entropykey shipped complete with simple open drivers which fed the entropy into the kernel's /dev/(u)random pool thus augmenting rather than replacing everything else your system could draw on. You don't really need it unless you are running headless VM servers with no moving parts or user interaction.
