Difficulty changes every 2016 blocks, which usually takes about 2 weeks or so.  Your mhash, when factored in with difficulty, will tell you about how many shares you'll get in a certain time frame.  Its all based on averages though, so you could be higher than the estimate or you could be lower or you could be spot on.
