There are several different types of Bitcoin clients. The most secure are full nodes like Bitcoin Core, which will follow the rules of the network no matter what miners do. Even if every miner decided to create 1000 bitcoins per block, full nodes would stick to the rules and reject those blocks.

Nah. SOCKS proxies and HTTP proxies often keep logs.
If you are doing something illicit i recommend not but for total security use a Logless encrypted VPN + TAILS + TOR/i2p

It dependents on where you live and what you're planing to do.
A simple proxy, even a logging one is sufficient in some cases while you can get busted in other cases where you use VPN&Tails&Tor. This is possible when you're leaking too much info over Tor including your writing style and your general behaviour.

Use the TOR network for maximum identity protection, although you'll never be 100% safe by any method.
