Anyway, I appreciate the support, name/flavor suggestions, and all the love from the community. Our next test that may be the most important, is testing the shelf life. I took 31 chips and put them into a ziplock bag, and I will just be leaving them on my counter sealed. Every day I will eat one, and hopefully find out how long these chips can safely be stored at room temperature before the taste begins to change. I'm hoping it will be at least two weeks, as these chips will be made to order, they won't be sitting around besides in transit time, and hopefully giving you well over a week to eat them. It would be very nice if they stayed fresh longer than that, and I'm sure I can change the time with vacuum sealing, and other methods, but we will not be adding any preservatives.

You'll probably also want to store them at warmer temperatures than that, due to shipping conditions to test out if they'll spoil during shipping.

You'll probably also want to store them at warmer temperatures than that, due to shipping conditions to test out if they'll spoil during shipping. Good suggestion, but my room temperature is about 86-90 degrees, so I think that should suffice. But we will make sure we have all senarios covered before shipping out bad chips A little late to the party... but could I suggest a name change to ButterFried Bags?
Funny you should mention that, we are actually thinking of changing the name all together, because as of now, we haven't been able to incorporate butter in any way. If you add butter before cooking, it messes with the oil, and under the right conditions will catch fire. If you add the butter after cooking, then the chips are greasy. We are thinking about BetterFried Chips, or BetterFried Bags would work too.

Ok, a little bit of research yielded some info about shelf life. Just in a ziplock bag, they should maintain 100% freshness/taste for about a week. If they are sealed, about 3 weeks. 3 weeks sounds good to me, so I will start seeing how to vacuum seal them without crushing them.
Also for shipping concerns. I am about 95% sure these chips should have no issues with being shipped. They are very resistant for chips, I suppose due to their size. I shook them violently in a paper bag, and not a single chip broke.
As well as testing shelf life on them, we are also starting to try to figure out what increments to sell them in. I'm thinking we will just sell them by ounce with there being a minimum purchase order, of whatever makes economical sense. So for example you could order 3, 3.5, 5, 10 oz, 8 kilos, 800 lbs! What I mean is, you can pick your own increments.
to put it in perspective, the large single serving bags, that you get at a grocery store is 1.5 oz, with the huge bags being 11 oz.

Ok, so good news, like an ordinary chip, you can leave them out exposed to air for awhile without them getting stale *edit* we are up to 9 hours or so now. I'm not sure how much longer it will take before those that I left out get stale, but that's a good sign anyway.
We are still checking the best feasible way to ship them. Food vacuum sealer bags would be the best option, but they are quite expensive, and at this point, we are trying to keep expenses low, so we are checking out how well standard Ziplock bags work.
And I should also mention, we will accept Litecoins as well as Bitcoins as payment for chips, when we set up pricing, amounts available, etc after we have finished all necessary testing.

Well, heres a pic of the first bag. The scale reading is 4.39 oz, and the bag is a quart sized bag. https://i.imgur.com/2BA9J.jpgThose chips sitting outside the bag, have actually been sitting out for about 9 hours now, and are still fresh and good tasting. I actually don't think regular Lay's potato chips stay fresh that well when just left out, so I have hope!

And I am now shocked. 24 hours later, the chips just sitting on the table are still tasty and crisp. I will repeat, there are no preservatives or unnatural ingredients in our chips, yet you can leave them sitting out for an entire day, and they will not get stale. Come on Lays/Utz, how can you be letting this happen?

Ok, so I'm convinced these chips cannot go stale. I'v had some extras that wouldn't fit into the first bag sitting on my table in a bowl for over 2 days now, and they are still as crisp and tasty as ever.
As soon as I have confirmed that they can stay fresh for at least a week in a bag, we may be able to ship out our first batches. That being said, we will be figuring out prices when we do cost calculations with our next batch.

If you continue to use ZipLock bags, I recommend that you create a label that has the name of the flavor of the chip+any tagline associated with the flavor of chip. 5. In addition you should list the ingredients on the label as well as any website you create, in order to allow people with allergies to see what they are eating. This will help you avoid liability. 6. You should try to make some sour cream and onion chips. I may order some, depending on the flavors.

1 Yes 2 Right now if you want some just ask, we are pretty much giving them away for the price of shipping, we just have to make more 3 Either ziplock bags or brown paper bags, they dont seem to go stale... 4 we are going to make little stickers to go on the bags 5 why wouldnt we do this, unless we don't want you to find out our secret ingredient, toothpaste 6 We need a funny pun name for sour cream and onion though. A tank full of nitrogen is also not that expensive... I would be more worried about that browning of the chips - http://en.wikipedia.org/wiki/Acrylamide comes to mind.
