Are there any Linux or open source clients that don't require downloading gigabytes and gigabytes of the blockchain?

Just any of the 3rd party lightweight wallets for linux will do. ie:

Bitcoin.org has an overview of various clients: https://bitcoin.org/en/choose-your-wallet (select Linux as your OS).

This means: MultiBit and Electrum are my options.

here I can download electrum in the package manager.

Armory too, but you will need the qt installed too

Yes, but I am going to recommend Electrum it runs real light and smooth and literally takes seconds to be up and running, whereas I have seen Multibit still takes some time to sync.

Multibit uses Java whereas Electrum uses Python which makes Multibit a bit slow in low CPUs. Have you tested Multibit HD? Its in Beta phase but it is better.

Me too. Synaptic package manner is a good one for instaling directly.

You can use CounterWallet with Armory offline which doesn't need Bitcoin-Qt.

Greenaddress requires you to remember your Mnemonic phrase. If you happen to be travelling and forgot to bring a paper with Mnemonic phrase with you or it isn't stored in your computer, you won't be able to access it until you find it. Greenaddress however, offers more protection against hacking attempts and could lessen the damage. This is however, not necessary for OP as ubuntu have very few viruses around.
