Could I record every expense and sale my company has on the blockchain along with notes, VAT numbers, dates etc so that my accountant could check it at some point in the future?

Yes you can "save" some data in a transaction and if you want you can check that data in the future (with the op_return function but only 40 byte , in the future 80 byte).
