Where do you see the price on 1 NEO in the year 2020? Da Hongfei has said they're going to be the no. 1 blockchain or at least the no.1 platform coin in a couple of years - ambitious or achievable?

Depends on how you're going about it.
If you're a long term investor, wallets and cold wallets. Don't even think about holding long-term on exchanges.
If you're a trader, then it's fine to have some funds on an exchange. But always remember to use 2FA to keep yourself protected. And only keep what you're willing to lose on an exchange.

NEO and it's derivative currency GAS are what i'm looking at. Also considering Monero and cardano as they're solid long-term holds.

Whatever is going on is nothing out of the ordinary. Markets move in cycles. It's important to understand this fact and invest some of your portfolio, I'd argue a considerable portion, only in project you believe in long-term.

It goes up and up as well the going gets good. That's what markets do. An no matter how "bad" the swings get, remember that these types of oscillation are nothing but ordinary. Make sure to hold coins you believe in. And understand that if the gains you're aiming for seem above average so will the risk you'll need to take on.

What are you top pick for upcoming/ongoing NEO-based ICOs?

When it comes to ICOs, as a general rule, I prefer investing in NEO based projects.

One of my top picks is Spotcoin.
 
The team behind it is great - they regularly post updates and very helpful on telegram, not to mention have a good deal of experience.
Their goal is to create a crypto to fiat exchange both OTC and online. Their philosophy is basically "Simple Liquidity" and with their project they aim to do just that, provide easy liquidity and solve a huge liquidity problem in the crypto space.

It's also important to note that it costs 500 gas, which is roughly 15-20k, to launch a token on NEO. This acts as a filter where only legit, good quality projects can see their token become a reality. NEO ICOs have also had a much better track record as compared to their Ethereum-based counterparts.

That's why I have a good feeling about Spotcoin.

Bitcoin, ETH and NEO. In that order.

I've never understood why ICOs that don't raise any money and distribute all their tokens via airdrop stand to have any value or benefit in any way. If the point of the ICO is to raise money to fund development and operations what sense does giving away all your tokens make? isn't this a risky move since all you're doing is hoping that the token has value at a later point of time?

it's always better to hold in multiple wallets. Sometimes this can't be avoided if you're holding different types of coins, which is a good thing. Just be sure to keep a log of all your keys - this can be a frustrating process so a hardware wallet would be recommended.

It all boils down to the writer I guess. The better his technical prowess and whitepaper writing abilities are, the easier it'll be. I'd assume it'd be very difficult for a complete noob to write an ICO whitepaper, let alone be taken seriously for even attempting to write it without any technical backgroud.
