If your transaction is still in pending status you maybe able to cancel it in a very simple way go to transaction text then find the Nonce position in etherscan usually its at the bottom you can click to see more to show details once found the nonce position copy it and back to MEW and make a transaction by sending 0 eth to your own address using the same nonce position you copied in the pending transaction, you can see the nonce in edit advance settings in mew before sending.

It depends on a defi projects some are for long term but projects like yield farming algorithms are most likely not for long term as you observed there are so many yf projects almost same with each other at first high price and after a week dump by farmers and next pump and dump which is not good for crypto market much better to stay away from farming tokens.

Yes you can see compare to other dex or even cex uniswap has really huge liquidity meaning you can exchange your token in an instant even in large volume even in million dollar like the example in OP.

Sounds new to me pay zero gas fees fees trading in Uniswap? so they will shoulder the eth fees? From what I know about uniswap the fees is based on the recommended real time gas needed to complete transaction if they will reduced the gas fees the transaction might take long to confirm and the price might change according to your price target.
