I recommend Mullvad, it's simple and is easy to pay with Bitcoin. Their servers are in the Netherlands I believe. They do not log any data at all.

Why don't you just get your own VPS and setup your own VPN on it. We offer very cheap VPS unit's that would work perfectly for this.
