I just registered a new, bitcoin related domain with NameCheap and purchased a WhoIs Guard subscription for it just like the rest of my 100+ active domains with them, I didn't realize until after my purchase that WhoIs Guard is not compatible with .US domains due to restrictions. What is the best option for me? I'm not exactly thrilled with my information being on public display to anyone who wants to query the domain with a WhoIs service. I've been considering getting a P.O. Box to mask my home address.

P. O. Boxes aren't that strong of a tool to mask an address. Any LE inquiry will pierce that veil with a phone call, and any PI worth his stuff can get the address (which has to be real, and they DO check) from your Post Office. Find yourself a registered agent service, preferably one that works out of a single wide that is off the grid in the mountains of Utah who spends most of his time casting his own bullets and muttering about how the whole country has gone to hell ever since Eisenhower quit being President.

Or a completely anonymous remailer service. Preferably in another country.

This is in no way an option. As per regulation of ICANN, all domains registered must have valid contact information. Let's say I need to be contacted for some reason for the domain name in question, if the can't contact me they will simply proceed and I could have the domain possibly revoked or transfered out of my account. Granted the possibility of me needing to be contacted is very slim, it could happen.
