1)If you did not expose the private key before encrypting (Usually safe if you do it offline on a clean computer). Or get your encryption password keylogged. Then yes.

2)Yes. Try restoring it on another computer to get the hang of it.

It's safe as long as the password is strong enough and you don't forget it.
Like mentioned above, you should always try your backups out. Since you created your wallet offline, you should try to restore it offline as well.

Technically it is not 100% safe. If you really want it to be safe, and don't need to be using the coins frequently then encrypt it with the right password (long, includes symbols) and put it on a offline device. Even if you encrypt your wallet there's always a small chance that some day, someone is going to infect you with a keylogger. Once that happens, your encryption is pretty much useless. If you're into altcoins, you should also be very careful. More and more coins have viruses in them.

Keep in mind that you need to do regular backups with bitcoin core. By default every 100 addresses you use, assume one address (for the change) created with every TX you do. I tend to lose count on this, thus I just do monthly backups and an extra every now and than if I created many transactions or addresses.

Im not really here, its just your imagination.
