Just wanted to double check that these are 18 pin cables since I've been reading up on the S5 and they seem to have one model that came with 16 pin connectors and cables.

Yes, but you can saw off the extra pin, if you need 16 pins. So the best of both worlds. Just make sure you otherwise follow the pinout. You need to remove the last 2 pins, not the first 2.

TLDR: The cable is fine for both 16pin and 18pin. We're not sure what the extra 2 pins does, but it works fine either way.
