I'm curious how reprogrammable the FPGAs are in practice. I'd be really interested in acquiring a used FPGA board if it were practical for me (as a software guy) to potentially convert them for other tasks (like password cracking) as a learning activity.

They are 100% reprogrammable. If you know (or plan to learn) Verilog or VHDL, you can teach them to do whatever you want.
