Well let's say that those ones are the ones that you can trust the most.

whenever you want to know more about a service or a business you want to use you have to check what others had to say about it, like feedback and stuff like that so for gambling sites go to the gambling board and see the different topics and check the old ones to see how they are doing. check the reputation of the owner too.

I would say that dice sites are reliable and if you are going to play with trusted ones then you don't have to worry about it. They are implementing provably fair as others mentioned it already. Are dice sites reliable? Not all of them obviously and will be always like that.

Basically all dice winning bets are based on luck as it was facing the so-called provably fair system. So any strategies will not work as it was only a "decoration" to think that it will increase the winning rate. But not all dice sites have that provably fair feature so choose only a dice site that has a positive feedback. Generally all the big dice sites are reliable in the meaning of provably fair. If it isnt, then you should find one which is and play on that. One another meaning of reliable could be about being able to keep some BTC on the site. I think not all dice sites reliable. I means the site have a  provably fair(mostly but not all), so it's become transparent and bet based on luck, but the site itself controlled, your account controlled, which means the owner reliable or unreliable.

One another meaning of reliable could be about being able to keep some BTC on the site.

I think not only keep btc, the other problem such a withdrawal also need to considered and other technical system on the game itself.
